For decades there has been controversy over the role of dietary fat and heart disease, diabetes, cancer and other chronic diseases. Decisions made by multiple government agencies have created strategies educating the public about the concerns of fats and changing eating habits of people around the world. New research shows that perhaps this research has wrongly targeted the restriction of fats. Course Outline: • Review the history of dietary fats and disease • Review fats and heart disease • Review the role of fats in health and disease • Discuss good fat vs. bad fat • Create educational tools to educate patients as to what is accurate Learning Objectives: • Understand the role of fats in health • Illustrate the role of fats in disease • Discuss clinical uses of fats for disease prevention Explain food planning for patients
